The Capital Mbombela welcomes Chef Keegan Maistry, bringing royal weddings and rugby-field braais to the dining room

Keegan Maistry’s culinary career started in his mother’s kitchen, learning the value of a home-cooked meal. It has since taken him to a royal wedding in Monaco, a rugby pitch with Manchester United, and some of the most demanding kitchens in the world. Now it brings him to Mbombela, where he takes up the role of the newest Chef at The Capital Hotels, Apartments and Resorts.

Maistry’s appointment marks a significant investment in the hotel’s culinary identity, and his résumé reads like a well-travelled recipe book. At The Oyster Box Hotel, he catered the Royal Wedding of Prince Albert and Princess Charlene of Monaco and introduced Manchester United Football Club to their first traditional South African braai. In the United States, he served up to 600 guests per seating at the 5-star Hunters Run Golf Estate in Florida under Executive Chef Armando Rodriguez, before taking over the Garde Manger section at Fishers Island Private Club, ranked 18th in the world. He also worked alongside celebrity chef and culinary educator Nils Noren in Glen Oaks, New York, earning an invitation to collaborate again in future.

A global career, brought home

Back in South Africa, Maistry sharpened his craft as Sous Chef at the award-winning Singita Sabi Sands, plating fine dining in the middle of the bushveld, where the kitchen works around the rhythm of game drives rather than the other way round. He then held Executive Sous Chef roles at two of Johannesburg’s largest hotels, the Radisson Blu and Sandton Sun, before opening the flagship four-star Courtyard Hotel Waterfall City as Executive Chef. Most recently, he led the kitchen at the trendy Radisson Red in Rosebank, known for its bold, design-forward approach to hospitality. Mbombela now becomes the next chapter in a career built on adapting to new kitchens without losing sight of where it began.

“Every kitchen I’ve worked in has taught me something different, but the thread running through all of it is the same one I learned from my mother, food should bring people together and feel like it means something,” says Maistry. “At The Capital Mbombela, I want to build a menu that’s rooted in local, South African flavours, served with the kind of care I’d want on my own table.”

Shisanyama Night: A taste of South Africa

Guests will get an early taste of that vision at Shisanyama Night: A Taste of South Africa a South African-themed evening hosted by Maistry on 25 July. Inspired by Nyama Battle Street Food, the spread moves through beetroot, coleslaw and salsa salads, pap, samp and beans, dombolo and corn bread, morogo and chakalaka, and a meat feast spanning beef tripe, hard body chicken, boerewors, beef chuck steak, seafood curry and bobotie, finished with malva pudding and koeksisters. It’s the kind of table built for sharing rather than plating for one. The evening includes a Heineken Draught special at R50 per draught and live music running throughout at a cost of R395 per person, with casual dress code and bookings handled through the restaurant manager at fnb.mbombela1@thecapital.co.za.

The launch of Maistry’s menu coincides with a reason to stay longer: The Capital Mbombela is offering a 20% accommodation discount from 24 to 26 July, giving guests the chance to pair Shisanyama Night with a comfortable overnight stay rather than a long drive home afterward.
